I am jealous of Helen Rosner; really jealous. She was able to peek behind the curtain at Ad Hoc as she and chef de cuisine Dave Cruz made a dish from the cookbook.
Rosner, from
Grub Street fame, has posted a photo step-by-step where she and chef Cruz make Chicken Mar i Mutanya. Rosner does a nice job of letting us know when Chef Cruz deviates from the printed recipe as well as noting some of chef Cruz's useful tips along the way.
